Today I'm sharing with you my sweet girl's favourite Apple Crumble Recipe.
Sofia is the apple crumble making guru in our house. Mostly because she was always very patient with the rubbing in of butter for traditional crumble so has become known for her crumbles. We try to steer clear of butter and sugar these days so this is our latest version that we are enjoying.
Filling
- 3 apples and 3 pears
- 1 cup apple juice or water
- 1 teaspoon vanilla bean paste
Crumble topping
- 1 1/2 cups rolled oats
- 1/2 cup coconut
- 3 tablespoons organic maple syrup
- 3 tablespoons macadamia nut oil
- 1/2 cup slivered almonds
- cinnamon
Core and cut the pears apples into pieces. Place in a saucepan over a medium heat and let the liquid reduce until the apples are soft.
Add the oats, coconut, maple syrup and oil to a food processor and blitz till it resembles crumble. (You can also do this by hand and its not as crumby looking but still good!)Put the fruit into an oven bake dish and place the crumble on top. Sprinkle with cinnamon and slivered almonds.
Bake for 20 minutes or until the top is golden - serve with custard cream or ice cream.

I do love a yummy dessert in winter (actually any day really ) but there is something so good about the smell of stewed fruit and cinnamon in the house on a cold evening.
