Today we have the lovely Tammy from Girls Wear Blue Too, popping in to share her beautiful orange cake recipe with you all. Since oranges are in season in Australia now, it seems like the perfect recipe - happy cooking!

Ingredients:
125g Softened Butter
3/4 Cup caster Sugar
1 1/2 Cups SR Flour
1/4 cup of milk
1/4 cup of orange juice
2 eggs
1 tbsp finely grated orange rind.
Method:
Pre heat your oven to 180 deg and prepare your chosen pan, I typically make this in a loaf tin and I grease and line with baking paper.
Put all the ingredients into the bowl and mix.
This is what the recipe instructs though I personally take care to not let the orange juice and milk mix as in my mind this is just wrong.
Mix well until all ingredients are thoroughly combined 3 to 5 mins should do it.
Pour into your tin and bake for 35 minutes.
Turn out to cool on a wire rack.
Icing:
1 1/2 cups sifted icing sugar
1/3 cup softened butter
I teaspoon finely grated zest ( and more to sprinkle on top if desired )
Orange juice.
Mix all ingredients well and add orange juice until desired consistency is reached around 1 tbsp does it for me. You may need more or less.
This icing is better in my opinion if you substitute half the butter with softened cream cheese.
When the cake is iced take a break and enjoy some with a Cuppa.
