On the bookshelf

Haven't posted about reading for some time - though its always high on our list - especially now with school and book club - I remember so well getting book club from school- choosing a special book- Its quite sweet to sit back as a mother and watch the girls do the same - circling their favourite books in their catalogues

So on our bookshelf at the moment

Fairy School Drop Out
- Just delightful - about a fairy who doesn't like being a fairy at all- filled with cute illustrations but still a chapter book.

While i was growing up Pippi Long Stocking was one of my a favourite books - and there is now anew version out  which has been illustrated by Lauren Child - so it combines my favourite story and the illustrations of the girls favourite stories.

On my own reading list - I have just finished Escape - which is on Oprahs recommended reading list - fascinating look into one womans struggle to find  happiness I guess is the best way to describe it - well worth the read.

supposed to be great and you know I love a good crock pot book- How its come into my hands is another story but i might direct you to the dizzy Miss Jo Kneller to tell that story - perhaps. Or perhaps not.
And finally health update ...
I am still off work - going into my 3rd week - ( almost didn't have this amount of time off when I had the girls! (slight exaggeration but you know what I mean)
Still the same blurry unsure feeling disorientation not able to concentrate or do more than one thing at a time -sleeping crazy amounts of time, loud noise or bright lights driving me crazy. So 2 mris and a slew of blood tests etc and the prognosis is still the same - rest  rest rest. Trying to but getting so frustrated with the healing process.

Site up tonight I have had some helper bunnies so all should be on time.

ANTM Week 2

So in our house Belinda is the favourite -  well she's Talias favourite - because she wears glasses Mumma  - I want to wear glasses - HMM No you don't- Though what chance does she have with Richard and I both glasses wearers?

Diner tonight is

Meatballs and Spaghetti

Love this one -so simple, and the girls gobble it up

woollies does the meatballs already in the butchers section... Coles doesn't -so its up to you
Me I do the woolies thing  but heres a link to recipe on www.taste.com.au if you don't have a woolies near you

2 dozen meatballs
Jar of pasta sauce ( tomato one ) - I use one of the garlic and herb ones and add more LOL
Tin crushed tomatoes - herb and garlic again...
Onion
Garlic (crushed) 1 tablespoon)
Spaghetti
Grated Cheese

Meatballs

Fry onions in some butter until translucent  - add tablespoon of garlic
Place in bottom of casserole dish
Pour tin of crushed tomotoes into the casserole dish -mix garlic and onion through
Drop the meatballs in
Open jar of pasta sauce cover the meatballs

Put lid on and cook for 40 minutes in moderate oven
With 5 minutes to go remove lid and add grated cheese until lightly browned or melted

While meatballs are cooking -  boil water and cook up spaghetti

Serve in deep bowls with a fork and extra grated cheese on top.

A variations on this - I have  used a mushroom pasta sauce and added in extra mushrooms with the onion (cooked them up first) and served with rice instead of pasta - Its good too!

Zert - Beater Licking Good  Lemon Cheesecake Slice

Seriously this is so good my husband will bring my home flowers when he knows I have made this

won't you Richard??- actually even perfume or a new lip gloss would be good..

Anyhow -- so yummy and sooo simple- really you have to try it.

    packet of lemon cake mix
    3 eggs
    1/3 cup vegetable oil
    400gms cream cheese (2 and a bit blocks)
    1 tub sour cream 250 gms
    1/2 cup sugar
    1 lemon

Open packet mix and put aside one cup of it

Mix packet mix 1 egg and oil together - I just use a fork

Line a tin with alfoil and spread evenly across the bottom

Bake in moderate oven for 10 minutes

while that is cooking

In a mixer bowl place everything else mix until creamy and good

Pour over the top of your base

and cook for 35 minutes.

Leave cool - (actually now is the time to put the meatballs in!)

To serve dust with icing sugar and cut into slices.

If you're being very flash - or you want the lip gloss perfume and flowers then serve with a fresh strawberry or two and some cream.

I don't have strawberries so the cream will have to do.

A project

I was working on some gallery projects last night - Richard was watching footy - Talia was glued to a DVD - Miss Sofia - I'm bored I want to do something .. So I handed her my camera and said take some photos - She was off giggling and shooting everything in sight - 109 photos later - Lots blurry but I knew what they were - It's fun to see what she takes photos of - my favourite is of her on the toilet a photo of her feet dangling.

So this morning I downloaded Jen Caputo's free digi template from Creating Keepsakes and made a layout. I used papers and elements from Jessica Sprague though I'm not sure when I downloaded them ..eeek just found them in my digi file. Nice smile Sofia - I took a photo of her when she was finished.
