ANTM Week 2
So in our house Belinda is the favourite - well she's Talias favourite - because she wears glasses Mumma - I want to wear glasses - HMM No you don't- Though what chance does she have with Richard and I both glasses wearers?
Diner tonight is
Meatballs and Spaghetti
Love this one -so simple, and the girls gobble it up
woollies does the meatballs already in the butchers section... Coles doesn't -so its up to you
Me I do the woolies thing but heres a link to recipe on www.taste.com.au if you don't have a woolies near you
2 dozen meatballs
Jar of pasta sauce ( tomato one ) - I use one of the garlic and herb ones and add more LOL
Tin crushed tomatoes - herb and garlic again...
Onion
Garlic (crushed) 1 tablespoon)
Spaghetti
Grated Cheese
Fry onions in some butter until translucent - add tablespoon of garlic
Place in bottom of casserole dish
Pour tin of crushed tomotoes into the casserole dish -mix garlic and onion through
Drop the meatballs in
Open jar of pasta sauce cover the meatballs
Put lid on and cook for 40 minutes in moderate oven
With 5 minutes to go remove lid and add grated cheese until lightly browned or melted
While meatballs are cooking - boil water and cook up spaghetti
Serve in deep bowls with a fork and extra grated cheese on top.
A variations on this - I have used a mushroom pasta sauce and added in extra mushrooms with the onion (cooked them up first) and served with rice instead of pasta - Its good too!

Zert - Beater Licking Good Lemon Cheesecake Slice
Seriously this is so good my husband will bring my home flowers when he knows I have made this
won't you Richard??- actually even perfume or a new lip gloss would be good..
Anyhow -- so yummy and sooo simple- really you have to try it.
packet of lemon cake mix
3 eggs
1/3 cup vegetable oil
400gms cream cheese (2 and a bit blocks)
1 tub sour cream 250 gms
1/2 cup sugar
1 lemon
Open packet mix and put aside one cup of it
Mix packet mix 1 egg and oil together - I just use a fork
Line a tin with alfoil and spread evenly across the bottom
Bake in moderate oven for 10 minutes
while that is cooking
In a mixer bowl place everything else mix until creamy and good
Pour over the top of your base
and cook for 35 minutes.
Leave cool - (actually now is the time to put the meatballs in!)
To serve dust with icing sugar and cut into slices.
If you're being very flash - or you want the lip gloss perfume and flowers then serve with a fresh strawberry or two and some cream.
I don't have strawberries so the cream will have to do.

Sounds wonderful but just one question what do you do with the cup of mix you have set aside? is it sprinkled on top before cooking?
